Fruit & Yogurt Parfait

6 oz Lowfat or Fat-Free Yogurt (any flavor)
1 Cup Fresh or Frozen Mixed Fruit
1/4-1/2 Cup Lowfat Granola (optional)

In 12 oz cup, layer fruit, yogurt and granola. This will travel well for up to 4-6 hours.

Whole Wheat Banana Pancakes

Whole Wheat Pancake Mix
1 Banana (enough for eight 3-inch pancakes)

Cut banana into small pieces (quartered then sliced about 1/8-1/4 inch thick). Prepare whole wheat pancake mix as directed on the box. Add chopped bananas into wet batter and gentle fold to combine. Use cooking spray or a non-stick skillet and cook as directed.

Peanut Butter & Banana Toast

2 Slices of Whole Wheat Bread- toasted
1 Banana- sliced into 15 to 18 circles
2 Tbsp Smart Balance or All-Natural Peanut Butter
Wheat Germ (optional)

Toast slices of bread to desired texture. Smooth 1 Tbsp peanut butter on 1 slice of bread and top that with approximately 7-9 slices of banana. Sprinkle with wheat germ. Eat open-faced.

Egg & Cheese English Muffin

1/4-1/2 Cup Egg Substitute
1 Slice Cheddar Cheese
1 Whole Wheat English Muffin

Cook egg on high in microwave (in a bowl about the same size as the english muffin) for 1 minute. Gently mix egg in same bowl and microwave for an additional 15-20 seconds. Using spatula, scoop egg out of bowl and onto an open-faced english muffin. Place cheese slice on top of egg and put the top half of the english muffin on top.

Orange Strawberry Smoothie

1/2 Cup Crushed Ice
1 Cup Orange Juice
1 Cup Nonfat Vanilla Yogurt
6 to 8 Ripe Strawberries (cleaned & quartered)
Protein Powder (optional)

Blend ingredients together in blender until desired texture

Breakfast Burrito

2 Eggs or 1/2 cup Egg Substitute
2 Tbsp Low Fat or Skim Milk
Salt & Pepper to taste
2 Tortillas- Fajita Size (option: Reduced Carb)
Cheddar Cheese- thin sliced
Salsa (optional)
3-4 Tbsp Chopped Tomato (optional)

Mix eggs, milk, salt & pepper in a small pan over medium heat. While cooking, slice up enough cheese to lay inside each tortilla. Warm approximately 2 Tbsp of salsa in the microwave.
Scramble eggs in pan. On a plate, warm tortillas with cheese in microwave for 45 to 60 seconds on high. Once eggs are cooked remove from heat and divide the eggs and optional tomatoes among the 2 tortillas, top with warmed salsa.

Am I Allowed To Take My Medication?

Beginning in the Fall of 2009, the NCAA has set forth stricter rules and regulations that pertain to the proper documentation and proper use of stimulant medications. According to the NCAA Committee on Competitive Safeguards and Aspects of Sport, these new rules are designed to, "protect student-athlete's health and safety and ensure a level playing field."

Exceptions are made for those athletes with a documented medical history that demonostrates the need for the use of such drugs. The NCAA states that medical exemptions may be granted if the student-athlete has:
  • declared the use of the substance to the athletic administrator responsible for keeping such medical records,
  • presented appropriate documention of the diagnosed condition, and
  • provided documentation from the prescribing physician explaining the course of treatment and the current prescription.

Louisiana State University has a protocol to address these specific issues as they relate to the need for medication, the testing required and the documentation process. The NCAA Committee on Competitive Safeguards and Aspects of Sports has developed an informative video to help answer some of the questions the student-athlete, their parent or guardian and the prescribing physician may have regarding use of these NCAA banned medications.
