Tabbouleh

Ingredients:
1 (14 1/2-ounce) Can Chicken Broth
1/4 cup Fresh Lemon Juice
1 1/2 cups Uncooked Couscous
10 Plum Tomatoes (seeded and chopped)
1 cup Diced Green Onions
1 cup Minced Fresh Italian Parsley
2 Garlic Cloves (crushed)
1/3 cup Olive Oil
1/4 cup Fresh Lemon Juice
1 tsp Salt
Garnish: Italian Parsley

Directions:
Bring chicken broth and 1/4 cup lemon juice to a boil in a large saucepan; stir in couscous. Cover, remove from heat, and let stand 5 minutes. Stir with a fork, and cool. Stir in chopped tomato and next 9 ingredients; garnish, if desired.

Want To Be a Better Athlete... Then Get Some Sleep


Athletes of all ages spend hundreds of dollars each year purchasing nutritional supplements that claim to enhance athletic performance, cause rapid muscle growth and lean up flabby bodies. While everyone should be concerned with the hazards and negative side effects of these supplements, collegiate athletes have the additional worry of knowing whether or not the supplement contains illegal, performance enhancing drugs. Really improving one's athletic performance may actually come down to an easy, less expensive alternative- SLEEP.

"Getting extra sleep over an extended period of time improves athletic performance, alertness and mood, according to a research abstract presented June 8, 2010, in San Antonio, Texas, at SLEEP 2010, the 24th annual meeting of the Associated Professional Sleep Societies LLC."
