Breakfast Burrito

Ingredients:
2 Eggs or 1/2 cup Egg Substitute
2 Tbsp Low Fat or Skim Milk
Salt & Pepper to taste
2 Tortillas- Fajita Size (option: Reduced Carb)
Cheddar Cheese- thin sliced
Salsa (optional)
3-4 Tbsp Chopped Tomato (optional)

Directions:
Mix eggs, milk, salt & pepper in a small pan over medium heat. While cooking, slice up enough cheese to lay inside each tortilla. Warm approximately 2 Tbsp of salsa in the microwave.
Scramble eggs in pan. On a plate, warm tortillas with cheese in microwave for 45 to 60 seconds on high. Once eggs are cooked remove from heat and divide the eggs and optional tomatoes among the 2 tortillas, top with warmed salsa.
